Hello to all readers of my blog! Today I want to share with you a fascinating story that led me to discover the secrets of obtaining a thick and soft pizza like the one you can taste in an authentic pizzeria. This story tells of my experience in the Scuola della Pizza, where I learned the tricks and techniques to prepare a perfect pizza. If you are a pizza lover like me, then read on!
It all started when I decided to dedicate a bit’ of my spare time learning how to make a pizza like a pro. My passion for pizza prompted me to look for a specialized school, and so I discovered the Scuola della Pizza, which organizes pizza maker courses for enthusiasts and professionals. I did not hesitate to enroll in their courses, eager to learn the secrets behind the art of making a thick, fluffy pizza.
As soon as I arrived at the school, I was struck by the welcoming atmosphere and the delicious smell that wafted through the air. It was evident that I was in the right place. My pizza making course started with a brief introduction to the history and origins of pizza, and then we immediately moved on to practice.
The first secret I learned is that the basis of a good pizza is the dough. The school pizza chefs taught me how to prepare a soft and light dough, using quality ingredients and respecting leavening times. We mixed the flour, water, yeast and a pinch of salt, then we kneaded vigorously until we obtained an elastic consistency. Subsequently, we let the dough rest in a warm place to allow the magic of leavening to take its course.
While the dough was rising, we started preparing the ingredients for our pizzas. The school provided us with a selection of high quality and fresh condiments, come San Marzano tomatoes, buffalo mozzarella, basil and extra virgin olive oil. They also taught us how to cut and prepare the ingredients the right way to get the best result.
After a patient wait, the dough was ready to be transformed into a delicious pizza. The pizza chefs showed us the techniques for rolling out the dough by hand, creating a thin and uniform base. It was a fun and challenging process, but with a little’ of practice I was able to master it. Then it was time to add the toppings. I've learned that less is more when it comes to classic pizzas, so I chose to top my pizza with a simple and delicious San Marzano tomato, buffalo mozzarella and fresh basil. I drizzled a drizzle of extra virgin olive oil to top it all off.
Once we seasoned our pizzas, we baked them in a wood-burning oven that reached high temperatures. This is another secret to get a thick and soft pizza: fast cooking at high temperatures. The intense heat from the oven allowed the dough to puff up quickly, creating a crispy crust and soft texture inside.
After few minutes, our pizzas were ready! I couldn't believe my eyes when I saw my thick, fluffy pizza, just like those served in the best pizzerias. I cut it into slices and savored every bite, enjoying the perfect combination of flavors and textures.
My experience at Scuola della Pizza was incredible. I learned so much more than I ever imagined and had fun along the way. Now, I can make a deep, fluffy pizza in the comfort of my kitchen, thanks to the secrets I learned during the course.
