It was a warm summer evening, when I was on vacation looking for an authentic pizzeria. As I strolled the cobbled streets, my nose was irresistibly attracted by a divine perfume that spread through the air. Following that delicious scent, I ended up in front of a pizza place with a catchy name: “The Pizzeria of Taste”.
I decided to enter, fascinated by its welcoming atmosphere and the inviting aroma it gave off. I sat down at a table and flipped through the menu, but my attention was immediately caught by a special dish: “The potato pizza”. Intrigued, I couldn't help but order it.
After a short wait, finally the potato pizza arrived on my table. It was a feast for the eyes and a delight for the palate. The base, instead of being pasta as tradition has it, it was made of potatoes, thinly sliced and arranged in a crunchy layer. The stringy cheese went perfectly with the sweet flavor of the potatoes, while the addition of crispy bacon and caramelized onion completed the picture of flavours.

I also learned the importance of choosing quality ingredients and respecting delivery times rising to get a perfect pizza.
The lessons were fun and engaging, and I was fortunate to be able to work closely with Silvio Cicchi, who shared his secrets and his passion for pizza with us. I learned how to knead dough, to spread the base and to garnish the pizza with imagination and taste. Every time I baked a pizza, the atmosphere was filled with an irresistible scent and waiting to taste it became unbearable.
After weeks of intense training, I had finally acquired the skills to make my own potato pizza at home. It was an exciting moment! While I was rolling out the dough and garnishing my pizza with potatoes, I realized how much of a passion it had become for me.
Now, whenever I feel like a special dinner or want to surprise friends, I prepare my potato pizza. It has become one of my favorite recipes and makes me feel like a real pizza maker. There is nothing more gratifying than seeing my guests' eyes light up in front of this unique and delicious dish.
