Today together with our friend Cesar who comes from Switzerland and has signed up for our practical course to become a pizza maker, we will prepare a special pizza, we will use an unusual but at the same time delicious ingredient.

I'm talking about the buffalo stracciatella mozzarella. It is a cheese prepared with buffalo milk, made with cream and pieces of stretched curd, prepared to be understood as the burrata.

Stracciatella does not need to be melted on pizza in the oven, therefore it must be added at the end of cooking. It is very easy to spread as it is quite liquid, just a spoon and that's it.
