Pizza with Mascarpone and Mushrooms Recipe Trifolati. I recently had a wonderful holiday in Sofia, the beautiful capital of Bulgaria. I am very interested in food culture, and I noticed something really strange, one of the most popular pizzas in this capital is pizza with cheese mascarpone cheese that is used in place of mozzarella.
